Banana Bread Pecan Scones

Bananas never last in our kitchen. In fact, until recently I’d have to remind myself to put bananas on the list before heading out to the grocery store. Thanks to my almost daily green smoothie habit, we will easily go through a bunch in under a week. Trevor also likes to have a piece of fruit with his breakfast and lately, it became a battle of who got the last banana. Since my weekday green smoothie usually happens after work, I always lost. Until now.

Cinnamon Raisin Scones

Happy Easter Weekend!

No holiday-themed recipe this week. Normally I would get really bummed out about not being able to “time” my recipes properly in accordance to the upcoming holidays, but this time I actually have an excuse. Right now, Trevor and I are making our way to the airport for our big Easter weekend trip. Vague much? I guess you’ll have to keep an eye on my Instagram for more clues.

This little mini vacation has been a long time coming for us. Since we didn’t travel anywhere for Christmas, we’ve both been feeling a little stir-crazy. Does that happen to anyone else? We booked this trip back in January during what I thought was one of the coldest weeks of winter (little did I know that February was still coming for us). Now that the weather is a tad warmer, I’m excited to tie up my running shoes and go explore and eat my way through another city.

Apple Cheddar Scones

A couple weeks ago, I received a large bag of gala apples from my cousin’s apple farm near Port Elgin. To say that I was excited was a complete understatement. Work commitments and a lack of vehicle options (I recently sold my car) have made it nearly impossible to leave the city, so I was a little bummed out that there would be no apple farm visit this year. To make up for it, we’ve been purchasing the locally grown apples from the busy St Lawrence Market Saturday farmer’s market, but as delicious as those apples were it never felt the same. Half the experience is definitely picking your own apples fresh from the tree and I can’t say I get the same thrill when choosing an apple basket from a sea of other identical apple baskets at the crowded market.

Another big draw I’m currently missing from apple farm is their in-house bakery. While I love their streusel top apple pies (so.much.apple), my mom is more partial towards the apple cheddar biscuits. In fact she is such a fan that she makes them herself using this apple cheddar scone recipe. Although it’s not the same recipe used by the apple farm (which makes hundreds at a time), it’s good for when the mood strikes, they will make a great last-minute breakfast addition and this recipe can be made in less than 30 minutes.

Skor Toffee Scones with Walnuts

It’s amazing how the weather can affect one’s mood. The off-and-on winter/spring weather has been frustrating enough, but nothing dampens my spirits more than waking up in the morning, looking out the window and seeing nothing but grey skies. No sun, no rain, just bleak, somber skies. Even though it’s Good Friday and we have no intentions of doing a lot today, it’s sort of off putting.

So naturally, after I was greeted by grey skies this morning, I knew I had to bake something special for breakfast and these skor toffee scones were just the answer. I splurged and used cake flour in place of some of the flour and butter in place of my usual margarine. Instead of sugar, I substituted pure maple syrup. Right before I baked the scones though, I brushed them with a bit of milk and sprinkled a little brown sugar. I’m pretty sure that last part is the secret to all scone-making because the result was flaky, savoury scones with a delicious crunchy sugar top. Sometimes I can’t believe that in the three years I’ve been blogging, I only have six scone recipes. Note to self – make scones more often.

Gingerbread Scones with Vanilla Bean Glaze

I may be addicted to vanilla beans.

It started innocently enough. Back in August, I was given a few vanilla beans by a good friend (and awesome cook) and I felt so intimidated that I didn’t look at them for two months. The beans lived in their little glass vial in the back of my spice cupboard and became a precious commodity in my kitchen. Every time I opened the cupboard door I would see the vial and it would taunt me and mock me for not thinking of a worthy recipe to use them in.

Matcha Green Tea Scones

A long time ago, I purchased a beautiful container of matcha green tea powder with the intention of baking all kinds of delicious matcha flavoured goodies

I made a few things, but then the container was pushed to the back of my cupboard. As I continued to bake things for the blog, I would reach into the cupboard for a bag of flour or baking powder, take notice the little container of matcha powder and would mentally remind myself to use it for my next recipe.

I’m embarrassed to say that this went on for a little while.

White Chocolate Toasted Coconut Scones

Last week on Twitter, I expressed my exasperation at my last visit to Bulk Barn. Since I have to drive there, I try to space out the visits so I can make one big trip to pick up everything. A normal visit usually consists of buying soft whole wheat flour, quick oats, regular oats, brown sugar, ground flax seed, carob chips and any other baking supplies I’ll need for the next few weeks.

Only last week when I arrived home with my bulging bags of goods did I realize that I didn’t have my flour. I remember scooping the flour from the bin into a bag, placing it in my basket and later placing it on the checkout counter with the rest of my purchases. Somehow it didn’t end up in bag, nor (thankfully) my receipt. I was mildly annoyed, but not as annoyed as I would have been had I actually paid for it and then forgotten it.

Apple Cinnamon Almond Scones

When it comes to naming recipes, how do you figure out which words come first? I must have stared at the title of this entry for 10 minutes straight, trying to piece together the words apple, cinnamon, almonds, and scones. Would it be better if almonds came first? Where does cinnamon fit in all of this? Apples were the highlight ingredients, so does it come first or second? Naming recipes shouldn’t be this complicated.

Lemon Blueberry Scones

It’s been one of those awesome weekend, where everything just clicks and seems perfect. I don’t know if it was the yoga I forced my body to endure, the coffee I find myself enjoying again, spending time with friends/family we haven’t seen in a while, the new music I’ve discovered or the better eating habits (I’ve been cutting red meat of out my diet and I feel amazing), but this weekend has been a blast.

So I figured I had to keep on making it perfect by baking some scones.
