Big Girl Brownies (White Chocolate and Amaretto)

There are some days where you just feel like you’re on top of the world. You wake up early, the sun is shining, your hair decides to cooperate, and there’s an extra bounce in your step. You arrive to work on time, go shopping during your lunch break and after work you come home and have a fabulous supper with a well-deserved glass of red wine.

You wish everyday could be like this.

Then there are the other days. You are late for work because of sleeping in and your umbrella turns inside out in the rain/wind, making it look like you decided to swim to work in your clothes. You forget your lunch at home, the congested traffic makes getting home a nightmare and you burn you and your significant other’s supper. When you reach for the bottle of red wine, you find it empty, so you decide to turn in even though it’s only 8pm.

I haven’t personally had that bad of a day, but we’ve all been there. You try to take on the world and it ends up pushing you right down again. What’s a person to do?

You can dwell on the fact that today was just not your day, or you can move on from it and make yourself feel better. I suggest pampering. At-home manicure or pedicure. Homemade facial (Pinterest is full of great recipes.) Chocolate also works great too and nothing is better in a pinch than these brownies.

The name derives from not being a child, but by being a “big girl,” trying to find your place in this world. You’ve let go of your mother’s hand and you’re out there trying to live your life successfully and carve your own path. Sometimes the world can be cruel and rainy, but you have to remind yourself that its only one bad day.

“Big girls” come in all ages. It can be the university student who is trying to finish her undergraduate and does poorly on a midterm. The new mother who wants nothing more than sleep and her infant who would rather stay awake. The young woman who wants nothing more than to see her family for the holidays, but ends up missing her plane because her boyfriend accidentally sets the clock wrong (true story!).

These brownies are for them and for anyone else who has had those kind of days. I used a box of brownie mix for convenience because honestly, who wants to slave over an mixer after a terrible day? And if you don’t have Amaretto, any almond-based liquor should work.

Big Girl Brownies (White Chocolate and Amaretto)

Ingredients:

  • 1 box of brownie mix (plus ingredients listed on back – I used Duncan Hines chewy fudge brownies)
  • 2 tbsp Amaretto (or other almond flavoured liquor)
  • 100g white chocolate, chopped up into chunks
  • Almond slices, for sprinkling

Directions:

  1. Mix your brownie mix according to the instructions on the back.
  2. Add amaretto and white chocolate and mix well. Pour into an 8×8 greased baking pan. Sprinkle with sliced almonds
  3. Bake according to the instructions on the box. Usually this is around 325*F for about 35 minutes. The toothpick should come out clean to ensure that the brownies are ready.
  4. Cool before slicing. Unless you are like me and love warm brownies, wait until they are warm to the touch and dig in. Knife optional.
